Banana & Berry Hemp Seed Pudding

A healthier snack or dessert made with berries, bananas, and hemp seeds! Naturally sweet, creamy, and extremely nutrient-dense. Plus, only six ingredients and one bowl are necessary.

– 2 just ripe (not overripe) bananas, (peeled // if too ripe, the flavor can be overwhelming) – 2 cups organic berries* (fresh or, if frozen, thawed) – 2 Tbsp light coconut milk* (or almond milk)

– maple syrup or pitted dates (optional // to taste) – 2 Tbsp hemp seeds* – 2 Tbsp chia seeds – 1/8 tsp ground cinnamon

Add the bananas, berries, and coconut milk to a food processor and pulse to blend. Then, taste and adjust the sweetness as needed, adding maple syrup or pitted dates (optional) and mixing until combined.

Next, pulse in the hemp seeds, chia seeds, and cinnamon (see photo). Transfer to 3-4 serving dishes (I like these ones from World Market; use fewer or more serving dishes if batch size changes).

Cover and refrigerate for at least two hours, ideally overnight. Will keep in the fridge for 3-4 days.

*For the berries, I used Trader Joe's organic berry medley, which included blueberries, blackberries, raspberries, and strawberries.

*If you're nut-free, we recommend using oat milk instead of coconut or almond milk.

*Some people find hemp seeds difficult to digest. If you have difficulties digesting them, use an additional 1-2 Tbsp (amount as indicated in the original recipe; adjust if batch size changes) chia seeds or flaxseed meal.

*Nutrition information is an approximate approximation computed without any additional toppings.
