Baobab Orange Chia Pudding

My Baobab recipes all have a yellow/happy/summer color motif, and this chia pudding is no different.  

Although it isn't precisely bright yellow or green, the orange juice gives it a hint of orange hue, and the almond milk gives it a delicate, beautiful appearance.  

In my view, this color is perfect for summer. In addition, the pudding is greatly enhanced by the toppings!  

I want some of this light, creamy, delicious food right now. I'm trying to avoid eating at night, so no chia pudding at 11pm.   

Ingredients

– 6 tbsp chia seed – ¼ cup rolled or steel cup oat – 2 tsp baobab powder – ½ tsp vanilla powder (or sub 1tsp vanilla extract) – 1 tsp camu camu powder (optional)

– 1 cup almond milk – ½ cup freshly squeezed orange juice (1 orange) – 1-2 tablespoon maple syrup (or honey if not vegan) – to serve: kiwi, berries, cherries, almond butter, cacao nibs, goji berries, hemp seeds, etc.)

Directions

In a mason jar, combine all the dry ingredients by spooning them in.  

Once the orange juice, maple syrup, and almond milk have been added, whisk thoroughly to combine.  

Place in the refrigerator and leave covered overnight.

After you wake up, split the mixture in half and pour half into one bowl and top with almond milk and whatever toppings you like.
