Grain Bowl Green Goddess

With peas, asparagus, and creamy yogurt dressing, this grain bowl is green.  

Tofu offers protein without being meaty, but cooked shrimp or chicken make a quick 15-minute meal or lunch.  

½ cup trimmed snap or snow peas Four spears asparagus, rough ends removed, chopped into 2-inch pieces ½ cup whole-milk yogurt ¼ cup chopped fresh dill  

Ingredients

1 tbsp lemon juice 1 tbsp virgin olive oil 1 minced garlic clove 1/4 tsp kosher salt 1/2 cup cooked farro

4 ounces diced baked tofu 3 sliced radishes 1 tablespoon toasted pumpkin seeds for garnish  

Ingredients

Boil a medium saucepan of water. Cook snap peas and asparagus for 2 minutes till soft. Use cold water to rinse. Mix yogurt, dill, lemon juice, oil, garlic, and salt in a small bowl.  

Serve farro in a small bowl. Add peas, asparagus, tofu, and radishes.  

Add 2 teaspoons of dressing (keep rest for later). Sprinkle pumpkin seeds if desired.
