Healthiest Potato Salad Recipe

When someone orders anything with the term "salad" in the title, they typically expect a low-calorie, healthful food to be served to them.  

However, such is often not the case, particularly in American chain restaurants.

The heartier salads, such chicken and potato salads, that don't include greens as the major ingredient are especially dangerously close to the realm of fatty salads.   

The majority of traditional potato salads belong to the group of salads that are blatantly harmful.  

Still, this is as basic a potato salad as they get, save for the fact that we fight the impulse to drench the veggies in a thick sea of mayo. Rather, a tart vinegar shot and Dijon mustard are used to strengthen the mayo.   

As a consequence, we have a healthier version of potato salad that retains the beloved picnic flavour while eliminating over half of the fat.  

It is also vegetarian-friendly, and if you completely omit the mayo and substitute a Greek yogurt-based mayo (you already know how much we enjoy Greek yoghurt), you can make this dish suitable for all of your health-conscious picnic guests!  

3 similar-sized red potatoes, 3 lbs Salt and black pepper to taste 2 chopped celery stalks 1/4 cup chopped pickles (try gherkins or cornichons) 1 sliced tiny red onion Two tablespoons Dijon mustard 1/2 cup mayonnaise 2 Tbsp white wine vinegar 3 diced hard-boiled eggs Optional smoked paprika
