Healthy Banana Bread

When I cook this healthy banana bread recipe, I lose complete control. Just knowing that a loaf is in the kitchen keeps me coming back for another slice all day. 

 I eat it with peanut butter for breakfast, with coffee in the afternoon, and with another slice (or two) for dessert. It's juicy, somewhat sweet, and full of rich banana taste.

Instead of using all-purpose flour, I combine whole wheat pastry flour and almond flour. Whole wheat pastry flour contains the same nutrients as conventional whole wheat flour, 

but it does not make baked items dense or dry. In fact, when coupled with almond flour, it gives this banana bread the ideal moist texture.

Next, I make it with no butter or processed sugar. I use a light olive oil (any neutral oil will do) and replace granulated sugar with coconut sugar.

Regular sugar works well in this recipe, but coconut sugar has a deeper flavor and naturally sweetens the bread.
