Low-carb Easy Keto Tomato Basil Soup

This creamy, vibrant, and fresh Easy Keto Tomato Basil Soup will become a family favourite, especially with my Keto Cheesy Herb Muffins!  

I used to love canned condensed tomato soup with grilled cheese sandwiches on cheap white bread with loads of butter from my mom. One of my favourite dinners tasted even better after we came inside from playing in the snow and were freezing to the bone.  

Snow days were the best, especially when you trudged in and smelled tomato soup at lunchtime. I haven't had canned soup in years, but when I wanted to make a great and easy keto tomato soup recipe,  

I thought of the flavour and scent from my youth. As my taste buds have grown more sophisticated, I wasn't a fan of the tomato soup's basic flavour, so I added some dried basil and topped it with some pesto from the fridge.  

Basil and pesto made this keto tomato soup "so good that I can't stop eating it!"  

This soup is creamy and warm yet has the brighter, fresher flavours we're craving as spring approaches. You'll have more time to enjoy the warmer (maybe) and sunnier (maybe) days ahead without standing over the stove for hours to make it.  

1 28-ounce can whole plum tomatoes (San Marzano recommended) 2 cups filtered water 1,5 tsp coarse kosher salt 1/2 tsp onion powder 1/4 tsp garlic powder  


1 tbsp butter 8-ounce mascarpone 2 tablespoons erythritol granules 1 tsp cider vinegar 1/4 tsp dried basil 1/4 cup prepared basil pesto. Add extra for garnish.
