Thai-Inspired Peanut Chicken Wing

Here's a delicious recipe for Thai-Inspired Peanut Chicken Wings: 

For the Chicken Wings: – 2 pounds chicken wings, tips removed and wings split – 1 tablespoon vegetable oil – Salt and pepper, to taste

For the Thai Peanut Sauce: – 1/2 cup creamy peanut butter – 1/4 cup soy sauce (use tamari for gluten-free) – 2 tablespoons lime juice – 2 tablespoons rice vinegar – 2 tablespoons honey (or maple syrup for vegan)– 

– 1 tablespoon sesame oil – 2 cloves garlic, minced – 1 tablespoon grated fresh ginger – 1-2 teaspoons sriracha or other hot sauce (adjust to taste) – 1/4 cup coconut milk or water (to thin the sauce if needed)

For Garnish: – Chopped fresh cilantro – Chopped roasted peanut – Lime wedge

Prepare the Chicken Wings: – Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Lightly grease the rack.

In a large bowl, toss the chicken wings with vegetable oil, salt, and pepper. Arrange the wings in a single layer on the wire rack. 

Coat the Wings: – Once the wings are done baking, transfer them to a large bowl. Pour the Thai peanut sauce over the wings and toss to coat them evenly.

Serve: – Arrange the coated wings on a serving platter. Garnish with chopped fresh cilantro and chopped roasted peanuts. Serve with lime wedges on the side.

Tips: – For extra crispy wings, you can broil them for an additional 2-3 minutes after baking.
